Sprinkle vinegar lightly over meat. Sprinkle both sides with Klein Karoo Biltong seasoning. Let it rest for 3 - 4 hours in the fridge. Hang to dry at 18 - 23 degrees until 45% to 55 % moisture loss is obtained.
